2 cans (19 oz/450 ml) black beans, drained and rinsed, divided
1⁄3 cup whole-wheat breadcrumbs
1⁄4 cup light mayonnaise
1⁄4 cup fresh cilantro, parsley or 2 green onions, chopped – optional
1 tsp vegetable oil
- Blend half the beans with breadcrumbs, mayonnaise, Poco Picante Salsa Mix and Burger Seasoning in a food processor until mixed but still chunky. Turn into a bowl and stir in remaining beans and cilantro.
- Wet hands to prevent sticking and form mixture into 6 patties.
- Coat a large frying pan with oil and set over medium-high heat. When hot, reduce heat to medium and add patties.
- Cook for 5 minutes, then carefully and gently flip and continue cooking for about 5 more minutes, until warmed through.
